Peak demand is the fixtures that can run at the same time, not every fixture in the house. Typical US flow rates: shower 2.0 gpm, bathroom faucet 1.2, kitchen faucet 1.8, dishwasher 1.5, washing machine 2.0, toilet refill 1.6.
